Dear Betsy,

Whenever I make cookies they come out flat even with a new box of baking soda and I always use softened butter sticks. What am I doing wrong?

Doreen,
It sounds like perhaps the sugar and the butter may not be mixed well enough. You should beat on high for about 10 minutes with your mixer. To test rub a small amount between your fingers. If it feels grainy it is not mixed enough.
You should always use a cold or room temperature cookie sheet.
You could also try refrigerating the dough before placing on the cookie sheet.
