Dear Betsy,
Are fresh or frozen vegetables more nutritious?

Signed, Pat Palmer Mass

Dear Pat Palmer Mass:
Dear Pat,
Fresh vegetables are more nutritious if they are locally grown. Usually when you purchase locally grown vegetables they have just been picked. The more time that passes between when the vegetable is picked and purchased the more nutrients they lose. Frozen vegetables are frozen right after being picked which preserves their nutrients. Therefore frozen vegetables are often more nutritous than fresh vegetables.
